Sweet Potato Casserole

Day 87

This is a dish that Laura made the other evening while I was out. I didn't get pics of her making it, and she has already been dipping into it here and there to snack on, which was her main reason for making it. However, it is time to finish it up and get it out of the fridge.

4 cups sweet potato, cubed
1/2 cup white sugar
2 eggs, beaten
1/2 teaspoon salt
4 tablespoons butter, softened
1/2 cup milk
1 teaspoon vanilla extract

Topping

1 cup packed brown sugar
2/3 cup all-purpose flour
6 tablespoons butter, softened

Laura says she followed the recipe with these exceptions: doubled the vanilla and doubled the amount of topping, so you'll have to click the recipe link to see how it's made since I missed all that.

Favorite Sweet Potato Recipe

Orange vegetables don't tend to top my favorite list when it comes to veggies, and I'm not an enormous sweet potato fan, either, but this is my favorite way to eat sweet potatoes. If you've never had this casserole or a similar one, you should definitely give it a try. I often take it to family dinners and it's always a hit. We also have it as a dessert sometimes, which makes sense, since it's kind of a custard.

Quick & Easy

You know how I love quick and easy! No prep time tonight. Popped it into the oven at 350 degrees F for 30 minutes with a foil cover. It does not get easier than that. :)
