Refried Beans with Eggs & Toast

Day 98

I flaked off the last few nights, and didn't post. Let me fill you in.

Wednesday - Day 96: Leftover Sweet Potato Burritos

Thursday - Day 97: Leftover Sweet Potato Burritos

And now you're up to date. Not only did I eat them 3 nights in a row, I also had them for lunch on both Wednesday and Thursday. Yep, 5 straight meals of sweet potato burritos. You're probably happy I spared you. However, it is worth noting that even the 5th time, they were soooo good! We finished all the sweet potatoes, but still had some beans left, so they were used tonight.

I heated the beans and fried the eggs in our new electric skillet, that Mom & Dad gave us for Christmas. It's quite useful for meals like this. Especially for cooking eggs, because it sits a lot flatter than our burners do.

The beans were dry; apparently I should have added a few drops of water to them while they were cooking. They were still pretty good.

The eggs were perfect.

Not bad. I like fried eggs and love potato bread with butter, so even though it was nothing fancy, it was still yummy and filling.
