Not just mushrooms. They also had green onions, 1/2 chocolate pepper and sharp cheddar. Not to mention, freshly ground tarragon. Served with a toasted, buttered English muffin.

I took more pics of the making of this omelette, and hope to get around to posting them.

Sooooo good. I give this breakfast-for-supper meal a 10. I know, because I continued eating even after I was full. Only 10's are worth that.

I always want these when I go through Tim's or McDonald's for coffee. They look good, but I don't think they have a veggie version, so I was excited to make some at home. Laura loved them too.

Ingredients


Garden Ingredients:
Black Krimm tomato
Green onions, snipped
Few sprigs basil

Garden veggies


Other ingredients:
Feta cheese
6 eggs
4 small wheat tortillas
4 tbsp water

Directions:

Chop everything.

Chopped feta and veggies

Mix the egg in a bowl with 4 tbsp water. Pour into 300 degree griddle.

Pour feta and veggies in on top of partially cooked egg. they really don't need to cook much, if at all.

Heat tortillas.

Corn Fritters with Herb & Scape Fried Potatoes

Corn Fritters!

We love them so. They are simple to make and very cheap. 'Cept for the maple syrup, but some things are just worth it. We make a good homemade pancake syrup with butter, sugar and maple flavoring but, naturally, it's not as yummy as the real maple tree by-product.

Some corn fritter recipes are pretty fancy, but I'm not about fancy cooking, and besides, we've tried one of those fancy corn fritter recipes before and it was no better than this one. Here's how I make mine:

Ingredients
2 cups pancake mix (just add water kind)
1 can cream corn
1/2 can kernel corn
1/2 cup water
Oil for frying
Paper towel for draining

The pic below shows my corn fritter ingredients with the exception of the butter. Not sure what the butter is doing there. I used it for the potatoes, not the fritters.

Directions
Mix the pancake mix, corn and water to make a batter. Adjust as necessary, it should not be runny or doughy enough to form in a ball, but enough to drop in thick spoonfuls into the oil. Thicker than muffin batter. Thinner than cookie dough.

Drop into the oil and cook 3 or 4 minutes on each side. Drain on paper towels.

Herb & Scape Fried Potatoes

These were sooo good. If you haven't had scapes but would like to give them a try, let us know and we'll try to save you a few. Locals only, of course, for fresh sake.

I fried these in butter which was a naughty thing to do, but then I threw in some garlic scapes, scallions and fresh herbs and redeemed myself by adding nutrients and antioxidants. hehe

These have a few components but aren't difficult to make and super duper tasty, so worth washing a few dishes.

Ingredients for Two
1 English muffin, halved and toasted
2 eggs, poached
1 dozen asparagus spears, steamed
2 slices Swiss cheese
Hollandaise sauce

We just fried these in some butter on the electric griddle. Washed, but not peeled, then sliced. So easy!

Sometimes the simplest meals are the tastiest. A fried egg with processed cheese on a toasted sesame bagel might not be the healthiest, but people eat worse things, and it was thoroughly enjoyable. I make perfect eggs. Gets a 9.

Also, I miss Carrie Weeks. A lot. Boooo :(

Toast n Stuff

Days 155-161

These were dark days.

On Sunday (Day 155) we had leftover empanadas and I did take a pic, but was feeling unusually poor and decided to wait and blog it. That's when the flu hit, or as I call it, The Wretchedness.

Monday, Laura made me a grilled cheese and tomato, but she didn't get a pic and I was in no shape to remember to ask her to. Or care. About anything. Including living. But, I thought eating might help and the sandwich was pretty good. It was the last real meal I would have until Thursday at lunchtime.

Tuesday and Wednesday's suppers consisted of toast and water one night and toast and tea the next.

On Thursday, I had a wake to go to and did not eat supper at all, but nibbled on some chips and dip and sweets at late uncle's house. By then, Laura was on Day 2 of The Wretchedness, but ordered some take out and tried to eat some rice.

On Friday, still lacking energy, we ordered a Greek Vegetable Pizza from Pizza Delight.

On Saturday we had egg salad sandwiches. Very good, and I took lots of pics, too. I had tomato on mine and Laura had chips on hers.

Northeasterns on Bagels

So we couldn't resist having these again. Too easy, and we had all the stuff, and it's all perishable, and we like them a lot. Not that we need an excuse.

Tonight's Northeastern Ingredients

Ingredients

2 everything bagels
4 eggs
1 tiny piece of red pepper
1 shallot
1 handful spinach
3 mushrooms
6 skinny slices of Havarti cheese
Salt & pepper

Northeastern ingredients

Directions

Chop all the vegetables, except the spinach, and sauté in a non-stick frying pan. No oil is necessary, since the mushrooms provide the moisture.

Vegetables sautéing

Whisk the eggs and spinach and toss on top of the vegetables in the pan. Using a spatula, scramble the mixture, and form into 2 bagel-sized shapes. Let fry for a couple minutes until bonded, flip over and top with cheese.

Cover the pan and allow the egg to cook through and cheese to melt.

Place on a buttered and mayoed bagel.

Laura found the egg patty was too thick, but was still really good. Maybe 3 eggs would be better. I give it a 8. Laura rates it an 8 with a "Was tasty." comment.

Northeasterns

Day 151

So, a Northeastern is like a Western sandwich but instead of the traditional ingredients of ham, onion, green pepper and cheddar, we use whatever veggies are on hand and whatever cheese is on hand. We call it a Northeastern, although last time we made it we called it Toasted Egg-n-Veg Sandwich.

Basically, by our definition, a toasted sandwich on any bread, with any vegetable or cheese and no meat is a Northeastern. Tonight we had ours on bagels. We decided to stop calling them Westerns since they really aren't Westerns in the traditional sense and renamed them Northeasterns.

So Many Ways to Make Them

The vegetables can be mixed with the raw egg and scrambled, or added in with the half-cooked egg and scrambled, or even added to the top of a half cooked fried egg, like we did tonight!

Bread options include:
Bread, bagel, English muffin, croissant, tortilla, pita or whatever bread you like or have at the time. We love our potato bread, but tonight we had sesame bagels that had to be used, and were the catalyst for the whole meal.

Veggie options include:
For vegetables you could use spinach, mushrooms, green onions, white or yellow onions, red, orange, yellow or green peppers, tomatoes, or whatever you happen to have.

Cheese options include:
You can skip the cheese for these, but if you prefer to have it, we've tried lots of different ones with eggs, including Swiss, feta, Havarti or cheddar.

Normally I scramble the eggs and veggies together, but tonight I was feeling more like a fried egg, so I added the vegetables to the uncooked side...

Tonight's ingredients included:
Red onion
Mushrooms
Red pepper
Havarti cheese
Sesame bagels

...and the cheese to the cooked side after flipping it.

Pop it onto the bottom half of a buttered bagel...

...and top with the top half of bagel. And enjoy! Simple and cheap and delicious.

Oats & Quinoa with Blueberries & Chia Seeds

I have oatmeal most mornings for breakfast. Sometimes I add other grains to it, like spelt or rye flakes, but we were out of spelt and rye today. What we did have on hand was some puffed quinoa, which we had bought ages ago but hadn't tried, so I used that and some chia seeds today.

Puffed quinoa, rolled oats & chia seeds

Ingredients:

1 1/2 cups water
1/2 cup rolled oats
1/4 cup puffed quinoa
2 tbsp chia seeds
1/4 cup frozen blueberries
1/2 tsp salt

Served with:

Brown sugar
Almond milk

Directions:

Bring the salt and water to a boil on high heat. Add the oats, quinoa and chia seeds and turn heat down to medium low.

Cook 2 or 3 minutes, then cover and turn down to low heat and continue cooking another 10 minutes. Add the blueberries and stir them in. Turn off heat, but keep covered another minute so the blueberries thaw, while grains stay hot.

I divided the cooked grains into our two bowls and topped with a heaping teaspoon of brown sugar and then added almond milk to mine.

Laura used brown sugar and maple syrup in hers. With the exception of the sweeteners, this is a pretty healthy meal, and super yummy to boot.

Variations

You can add any mixture of grains to oatmeal. The Bulk Barn has a few different mixes including a 12-grain one, which I've tried, and it's really good. We also add flax or hemp seeds to it sometimes.

You can also use any fruit you like, but be careful about when you add it. Apple or pear can be added right from the beginning and it will cook and soften, but frozen berries or tropical fruit should be added at the end and allowed to thaw but not cook.

You can also use any sweetener you like, or pass on sweetener altogether, since the fruit itself goes a long way to adding sweetness to complement the salt and grains. You can also use whatever milk you like, but we prefer almond milk with any cereal.

I give this a 10. You can't go wrong with the "delicious and nutritious" combo. Laura loved it too. She said it was the best hot cereal she ever had.
