Cauliflower Fettuccine with Garlic Bread

Day 83

Cauliflower is turning out to be one of those foods that people are finding super creative recipes for...it substitutes so many things! Or, maybe it's always been that way and I just hadn't paid attention.

Cauliflower Fettuccine with Garlic Bread

Cauliflower Fettuccine

3/4 package of fettuccine
1 head of cauliflower
1 tbsp extra virgin olive oil
2 tbsp minced garlic (from 4 med/lg cloves)
1/2 cup almond milk
1/4 cup nutritional yeast
1 tbsp fresh lemon juice
1/2 tsp onion powder
1/4-1/2 tsp garlic powder
3/4 tsp sea salt
1/2 tsp pepper


Directions

Wash florets and steam them for 15 minutes or until soft.

Sauté the garlic but don't brown. I made that mistake, then I panicked and set the skillet on a plastic cutting board. Doh!

It's funny how you never know when the last time you will do something, use something, see something. You don't even give it a moment's notice. Like how I didn't realize as I was mincing the garlic that it would be this cutting board's last use. And I was in such a rush that I didn't even realize I was using the wrong side until I had smashed them and then went to mince them up. Doh! Today was a series of mini calamities for me.

Drain the cauliflower and add it to the blender with the sautéed garlic. Add all other ingredients and puree until smooth.

Cook the pasta according to the package instructions, drain, and add the sauce. You will need to scrape it out of the blender. I realized after adding the sauce that I didn't cook enough pasta so I quickly put another batch in to boil. It set dinner back about 20 minutes. Doh!

Meanwhile, I had already put the garlic bread in the oven so it was harder than it should have been by the time the new pasta had finished cooking.

We only had this 6 days ago and still had some of the garlic spread left, so I thought tonight would be a good time to have another pasta dish and use the rest of it while it's still good. I even bought a lovely loaf of French bread for it. Sad that I didn't even cook it right.

Trying new things is awesome when they turn out. This would have been so much better if Laura had made it. She has better instincts. You're wondering how it tastes. It's good. It doesn't taste like cheese, and it's more pasty than creamy, but it does taste a lot like alfredo. For me, it needed something. I don't know what. I doubled the garlic and that was a good call. Maybe it just needed more salt? I was trying to be good and not use as much. Maybe it just needed a side of broccoli. At one point I almost went to the fridge to get the Sriracha sauce, but I was nearly finished my plate by then so I didn't bother. Maybe it will be better reheated, with some almond milk and some...je ne sais quoi. Parmesan is my guess. Defeats the point a bit. Part of the problem is that our house is freezing and dinner cooled off way fast. Not so good cold.

Rating: I give it a 6. It was okay; much better than the mac n cheese.
Laura rates it an, "I don't like this game anymore."
