Leftover day. Butter bean burgers from the freezer, and leftover mushroom scallop and buttercup squash from last night.

Butter Bean Burgers
Also known as Lima Bean Burgers or Triple B's, these are currently our favorite veggie burgers. Soooo good. Laura cut hers in half for easier eating, so I snapped a pic to show the pretty cross-section.

Reheating Potato Scallop & Squash
Without a microwave. We had them stored in glass containers, so I just had to cover them with foil and pop them into the oven at 400 degrees F with the burgers.

Looks good eh? It was! ♥ I had the spicy mayo and Laura had the avocado dressing. Both are great on these burgers.

Why not include dessert? We almost always have something. Nothing too fancy tonight...simple but delicious: honey butter on warm biscuits.

The honey butter was a conundrum at first. The butter was frozen solid, and that's just from sitting on the counter! Since we don't have a microwave, I decided to put the butter in a dish and set it on top of the stove while dinner cooked. When it was half melted and half just softened, I added an equal amount of honey and whipped them together, then set on the windowsill to cool. Not sure why I wanted it to cool...just to watch it melt into the biscuit more slowly? hahaha
Biscuits were warmed in foil in 250 degrees F oven while we ate.
