Our discovery of the not-bad-at-all deli slices - ham, turkey, etc - has opened up a few new options. Veggie Ham debuted on the blog a couple weeks ago with our Riverside Subs. It's surprisingly good.

These were assembled in the normal way of making sandwiches and baked in 425 degrees F oven for about 10 minutes until the bun was toasted and the Havarti was melted.
Spicy Sweet Potato Fries
1 sweet potato, cut into fries1/2 tsp chipotle powder
1/2 tsp cumin
1/4 tsp black pepper
1 tsp paprika
1 tsp salt
3 - 4 tbsp cup coconut oil
Cumin, sweet potato, coconut oil, chipotle powder
Laura chopped the sweet potato and set some coconut oil in a glass in a bowl of hot water to melt. It melts at room temperature. Normal room temperature, not winter room temperature.

She mixed the seasoning too, so all I had to do was drizzle the oil, swish it around, sprinkle the seasoning, swish it around some more and spread them out on the baking sheet. On some foil. I almost always line with foil or parchment.

Baked in the oven about 25 minutes at 425 degrees F, flipped halfway through cooking. These would have been great served with sour cream, but sadly, we didn't have enough foresight to think of that before they were finished cooking. There was some sour cream in the fridge but it was no longer fit to eat. I didn't get a pic.

I had mine with plum sauce (took some of the heat out) and Laura had hers sans condiment.

The fries were a tiny bit too spicy for me. With sour cream they would have been perfect. The subs were really good, I loved it. Giving this meal a 7.5.Laura: This is delicious...I hope to God you have Tums! 9.5...sour cream would have bumped it to a 10/
