Found Sauce Burgers

So, I found the sauce. And it wasn't at work. It was in the fridge, where I put it the minute I got home. Sooo, that's not embarrassing at all! Really, I'm used to it. It's standard Erin stuff.

The sauce was good on the burgers, and in general a very good sauce. It tasted very much like peppers and had a bit of kick. I definitely need to get the recipe from my friend. I give the burger a 9.

Forgotten Sauce Burgers

So, today, a friend at work kindly gave me a jar of something red and told me it was an eggplant/pepper sauce or spread. I asked her how she uses it and she said she normally has it on burgers. I decided then and there I would be having some veggie burgers tonight with my friend's sauce.

These are one of my favorite frozen patties. They're also one of the few soy-free veggie burgers. They cost $5.99 when they're not on sale, which they weren't today, but the price seemed fair since I was very excited to try my friend's sauce.

The burgers were really yummy. And that sauce? Still sitting on top of my locker at work. WHAAAAAAAAAA!!! :( I suck.

I give the burger an 8. Could have been a 10 with that sauce...crap.

We had good intentions of making some real food, but it never came to fruition as Laura was having back pain and I was painting.

Veggie Burgers, Potatoes, Yellow Beans & Grains

Day 282

Tonight, I had dinner with my mom, dad, sister, niece and nephew at the Boom Road homestead. Dad got these awesome veggie burgers at Costco, and BBQ'd them on the grill. We also had roasted potatoes, fresh yellow beans and a kale/grain dish that my sister cooked up.

Dad grilled burgers for them and veggie burgers for me.The veggie burgers he found at Costco were super good. Will probably get some next time I go!

I think they got these at the Newcastle Farm Market earlier in the day. I slathered mine with butter and seasoned liberally with salt and pepper. Soooo good. Can't wait for ours to grow.

Tara made this side dish so I'm not sure about all the ingredients, but I know it had a 10-grain mix, chopped kale and minced garlic. I did not see what she used for seasoning, but it tasted good.

BBQ "Chicken" Burgers

I had dinner at Mom & Dad's and Dad barbequed chicken burgers. He also barbequed "chicken" burgers, which they got for me! How thoughtful is that???

It was a good-sized burger and I only had room for one, but the other one is in the fridge for lunch tomorrow. Whoop!

These. Were. SOOOOOOoooooOOOO. Good. Soy or not, they were amazing. The texture was so real, I broke pieces off to inspect them a couple times, but I saw the frozen patties in the bag and read the ingredients myself. I wish I had taken note of the brand, but I'll find them.

Pimped Out Jalapeno Popper Black Bean Burgers

I love the idea of veggie burgers that have lots of protein without the soy. I could eat veggie burgers at least 3 times a week.

We had these last night but tonight we made a couple improvements:

1. Diced some portobello mushrooms to give it a better bite/texture. Didn't really work. Well, the texture was better, but they didn't hold together better.

2. Added more salt. I know you can't see it in the pic, but it's there.

3. Used more toppings. Last night we just had cheese, ketchup and mustard on these. Tonight we had:

  • Avocado/lime spread
  • Tomato
  • Lettuce
  • Garlic dills
  • Grilled mushrooms

They were impossible to eat but sooooo effing gooood. Got a 10 from me. Laura gave them a 9. Said they'd be a 10 if they'd stay together.

I stuck to the recipe and it was fairly quick and easy, but there were a few steps. I used 3 jalapenos and blackened them (a bit too much, maybe) then scraped out the flesh.

I mashed 2 1/2 cups of the beans and then started chopping the pepper and shallot. Mixed everything just as the recipe said and they were super easy to form, and stayed together well.

Mixed the mashed beans with the egg/panko/veggie mixture and was a nice texture for making patties.


Jalapeno Cream Cheese

The cooked jalapenos had to be diced then mixed with 1/2 package cream cheese (shown in above pic).

The recipe didn't really say how to fill the patties with the cream cheese mixture. I did the best I could and they turned out fine and didn't melt into the pan or anything. I think maybe I could have used more of it though.

These burgers were really good and held together well while cooking, but the buns we used were too small and the burgers fell apart while we were eating them. Also, the burgers had a really beany texture, so kind of mushy, rather than having a bite to them. They were nice and crispy on the outside, actually, it was just the inside that needed a nicer texture. The flavor was good after we added more salt. 

There is enough of the mixture for about 6 more of these, so we plan to incorporate some cooked diced mushrooms and 1/2 tsp more salt to them. Then they'll be perfect.

Sloppy Joes

As usual, we make our sloppy Joes using Yves Original Veggie Ground. It's not bad. It sort of mimics the texture of ground beef, enough to make enjoyable sloppy Joes, tacos, Shepherd's pie, etc. The flavor is not beefy, more like beans and onions, etc. It works.

Beet Salad

Like the kale salad of yesterday, this one is from a kit. The kit contains kale and sprouts, etc, and for the extras, they include golden raisins, diced cooked beets, feta cheese and white wine vinegrette.

I give this an 8 or 9. Our sloppy Joe recipe is really, really yummy...and these salad kits are surprisingly fresh and delicious.

This was as quick and easy as I could think of on Friday night.

Other than chopping and sautéing some mushrooms and onions, that it, it was quick and easy.

These salad kits you can get now are soooooo awesome. Open the bag and dump contents into a bowl. The produce contents include:
  • Brussels sprouts
  • Cabbage
  • Chicory
  • Kale

Inside are packets of yummies and salad dressing. This one came with pumpkin seeds, craisins and poppyseed dressing.

We used the SOL quinoa burgers again. I like these ones because they don't contain soy. We eat enough soy as it is, so I try to find other options when I can.

I give the meal a 9. It was super good, and best of all, didn't take long to make or clean up after, so I can enjoy the rest of my Friday night.
