Garden Salad with Avocado Dressing

Day 79

I just finished my second plateful of this absolutely delicious salad, and I can't say enough good things about it. Crispy veggies and salty pumpkin seeds with a creamy avocado dressing and a shake of sea salt and I went back for seconds. Now I'm too full, but it was worth it. And as far as calories go, I think I'm good. I think seconds of a garden salad, even with pumpkin seeds and avocado dressing, is far better than second helpings of say...mac and cheese.

Garden Salad

Baby spinach
Romaine lettuce
Tomato
English cucumber
Red onion
Fresh mushrooms
Roasted, salted pumpkin seeds

The pumpkin seeds give this salad another dimension, providing saltiness, crunch and a delicious and compatible flavor.

Pumpkin seeds

Creamy Avocado Dressing

2 avocados
2 clove fresh garlic, peeled
Juice of fresh lime
1/4 cup olive oil
1/4 tsp kosher salt
Water

Creamy avocado salad dressing

Whiz it all up in the blender, adding water until you've found your desired consistency. Blend until smooth, stopping to scrape down the sides a few times. Pour into a Mason jar so you can store the rest in the fridge to use again within the next week or so.

Serve over garden or green salads. I'm sure there are plenty of things this delicious dressing would go well with.

I think the first paragraph could also serve as a review, but let's rate it, shall we? I'm giving this salad an 8 1/2 and Laura gives it a 7. Not a 10 because salads tend to be on the boring side of supper ideas, which is probably why we don't have it more often. However, it was super enjoyable. I am taking the leftovers to work in my lunch.
