Sweet Potato Burritos

So, when Laura mentioned trying this recipe I was all like, "mehh" because, well, sweet potatoes. I like them more than I used to but they're not on my top 10 fav veggie list or anything. However, the recipe was recommended to her by the same friend who recommended the Butter Bean Burgers, so I was game to give it a try. I still had one bowl of split pea soup left in the fridge, you know, just in case.

I know! Sounds all crazy, but let me tell you...it's insanely good!

The sweet potatoes were baked for an hour until very tender, then scooped out of their skins and mashed. I took pics while Laura slaved.

Dealing With Beans

The most time-consuming part, as usual, was dealing with dried beans. Canned are easier but dried are better!

Sorting

First, there's the sorting. Any bag of beans has the potential to contain stones, and this bag of pintos actually did. Laura found one right off, while sorting through them. Would not be nice to bite into a rock.

Soaking

Next, is the soaking. Laura just does the quick soak, which is to cover with water, bring them to a boil then turn the heat off and leave for an hour. Drain the water (bye bye farty enzymes!).

Cooking 

Add more water to the saucepan (about an inch over the beans). Cook them for 30 minutes on medium-high heat or until tender. Drain the water and set the beans aside. Ready to work with!

Sweet Potato Burritos Recipe

Ingredients

3 cups of dried beans (makes 6 cups of cooked)
1 tbsp vegetable oil
1 onion, chopped
4 cloves garlic, minced
2 cups water
3 tbsp chili powder
4 tsp prepared mustard
2 tsp ground cumin
1 pinch cayenne pepper, or to taste
3 tbsp soy sauce
4 cups mashed cooked sweet potatoes
Flour tortillas
Shredded Cheddar cheese

Directions

Sauté the onion in the oil until clear, then add the garlic and continue to sauté a minute or two, then mash about 1/3 of the beans in with them.

Stir in the water and bring back to a simmer. Remove from heat and mix the chili powder, mustard, cumin, cayenne and soy sauce. That's it!

Assembly

Heat a tortilla for 30 seconds on each side in a dry frying pan on medium heat. Transfer it to a plate and top with beans, sweet potatoes and a sprinkle of cheese.

Roll into a burrito and serve with sour cream and chopped green onions. We skipped the salsa - it was not missed!

I was amazed. I took seconds. I am taking one for lunch tomorrow. I can't describe how delicious these are! Anything that makes me go back for seconds has to score a 10.
