Greco Garlic Fingers

We are Not Ashamed

We cheated and ordered garlic fingers. There is little nutrition to be found in garlic fingers. Only a big, fat pile of deliciousness and calories.

Suspected Ingredients 
  • Flour
  • Oil
  • Salt
  • Water
  • Mozzarella cheese
  • Garlic powder
  • Crack, or something equally addictive

We divided the box of fingers in half and watched an episode of How to Get Away with Murder while we demolished them.

Uhhhhh.

We forgot to take pics of this. We did use mostly stuff from the garden, including sweet potatoes, broccoli, onions and zucchini, but also bought some mushrooms to fry up.

Can't give you the tempura batter recipe because I didn't blog it and Laura didn't memorize it, but she does remember the sauce she made.

1/4 soy sauce
1 tsp sesame oil
Pinch of chili flakes
2 cloves garlic

It was pretty good. I gave it an 8 and Missy gave it a 9.5. Laura gave it a 9 too, but added it was mostly because of the sauce.

Boston Pizza: Spinach & Artichoke Dip

This is not really supper, just a disappointing snack that was ordered from Boston Pizza. If you've been following along, you may have noticed that Spinach & Artichoke Dip is one of our new favs. We have ordered it from BP a few times now and made our own at home a few times as well.

Since we're jamming today, and the kitchen is a mess of berries, jars and jam ingredients, we decided it might be better not to simultaneously try to cook supper, so we ordered out to tide us over until after the jam-making is done.

Spinach & Artichoke Dip

Normally, we split an order of BP spin dip with an extra order of bread, because there is always plenty of dip to share. Today, I opted for a Pita Pit falafel sandwich and Laura got the BP spin dip with the expectation that there would be leftovers for lunch tomorrow. Not to be! When I brought it home, she opened it and asked, "Who ate the other half?" I looked and here is what I saw:

This is less than half the amount of dip they usually served with this order. This pic was taken before we even touched it. I feel like we got ripped off today. This is not $10.95 (+ tx & tip $14.23) worth of food! Boooo. Probably won't be getting this again.

Laura rates it a 5 overall. Out of 10. That's not good.

Laura's Pitas with Spinach Artichoke Dip

I decided to make this because, well, we had all the ingredients. Even a can of artichoke hearts in the pantry for the past month or so. Not to mention fresh spinach and parsley in the garden!

I looked up a few different dip recipes to figure out how to create this dip but the one I followed most closely was Hot Spinach and Asiago Dip.

My recipe:
1/2 package cream cheese
1/3 cup mayo (Compliments salad dressing)
1/3 cup sour cream
1 can artichoke hearts
1 1/2 cups parmesan cheese (reserve 1/4 cup for top)
2 cups fresh spinach
1/4 cup flat-leaf parsley
1 tsp lemon juice
3 cloves garlic, minced

Mix it all up and bake for 20 minutes at 350 degrees F.

Remove from oven and sprinkle remaining parm over top and put under broiler for about 5 minutes to brown.

Laura's Pitas

As usual, Laura's pitas are a hundred times better than store-bought ones. Maybe even a thousand times better. They are soft and warm and elastic-y. And delicious. They even pocket.

We've had this at restaurants, but man, it doesn't compare. After making this at home, I wonder why restaurants bother adding salt to it...it doesn't need any added at all. It's perfect. Perfect 10.

Ginger Smoothies

In all fairness, this is not the only thing we've had tonight. We heated up our last slices of pizza right after work to tide us over until we got supper figured out. It was good again, but it was only a slice each, so we needed something else.

Smoothies

We have smoothies for breakfast sometimes, but not usually for supper. Laura thought it sounded good, and was making one for herself, so I ordered one too.

We had some fresh produce that needed to be used up, so this was a good solution for that.

Ginger Smoothies

Ingredients:
1 tbsp hemp seeds
1 tbsp chia seeds
2 tbsp ground flax seed
2 tbsp hemp protein powder
1/2 cup vanilla yoghurt
1 cup almond milk
1 1/2 banana
1 cup Paradise Trio (frozen mangoes, peaches & strawberries)
1 1/2 cup frozen blueberries
1 thumb-sized piece of ginger
3 kale leaves, ribs removed
3 Romaine leaves
1 orange
2 avocados
1/3 English cucumber

Ginger It Up!

Ginger is the main flavor of this smoothie. There is also an underlying banana flavor and you can also taste the berries a bit, but then you bite into a chunk of ginger again. It tastes very fresh! Did you know that ginger is peeled with a spoon?

That ^ is a Laura-sized thumb, so it did turn out spicier than she intended, I think, but I love it...it's a lovely smoothie. Definitely our healthiest meal this week!

I loved it! It was really filling, came together quickly and was delish. Smoothies might have to become our new Thursday thing. I rate this meal a 10. I thought it tasted perfect.

Laura: Health-wise it's a 10, taste-wise it's an 8; not quite sweet enough for me.

Stuffed Mushrooms à la Missy & Mushroom Fettuccine

Atlantic has shrooms on sale 2/$4.00 so we got some and the whole dinner was inspired by them. Missy had brought some stuffed mushrooms to our last get-together and I was kind of drinky and don't remember trying them, but Laura remembers them very fondly and wanted to make some of her own.

Stuffed Mushrooms à la Missy & Mushroom Fettuccine

Grocery List

Mushrooms
Fettuccine
Olive oil
Feta cheese
Parmesan cheese
Shallot
Butter
Coffee cream
Flour
Bread crumbs (like Panko)
Fresh basil
Fresh parsley
Fresh thyme
Fresh rosemary
Salt

Stuffed Mushrooms

Missy's recipe

1 lb fresh white mushrooms
2 or 3 tbsp olive oil
1 cup feta cheese
1/2 cup bread crumbs (like Panko)
1/2 tbsp frozen basil
1 tsp fresh parsley
1 tsp fresh thyme
1 tsp fresh rosemary

Steps

  1. Start by removing the caps from the mushrooms. (Chop the stems and reserve for the fettuccine dish.)
  2. Crumble feta cheese in a bowl (the more the better Missy always says).
  3. Finely chop and add two cloves of garlic.
  4. Add the parsley, rosemary, basil and thyme.
  5. Add the olive oil and mix until its gets "doughy".
  6. Add panko bread crumbs until its gets firm.
  7. Stuff into caps.
  8. Dip in breadcrumbs and add a dollop (about 1/4 tsp) of butter to the top of each one.
  9. Cook at 350 degrees for 10-12 mins.

Cheesy Mushroom Fettuccine

Alfredo Sauce

6 tbsp  butter
1 shallot, minced
1/3 cup flour
1 cup coffee cream
1 cup chopped cremini and white mushrooms
1/2 cup grated parmesan
1 tsp salt


Melt the butter, and add the minced shallot to the pan and sauté until shallots are clear.

Add the flour and salt and make a roux. Add the coffee cream and stir until well mixed with the roux.

Sauté the mushrooms separately, then add them to the sauce. Simmer until thickened then add the parm.

We didn't have as much parmesan as the recipe requires but it's still good. We had 1/2 to 3/4 cup.

Fettuccine Noodles

1 package fettuccine
1 tbsp olive oil
Pinch of salt

Cook the fettuccine to preferred tenderness in a bit of olive oil and salt. We like it slightly more done than al denté. Drain the noodles and serve.

Serve it Up

Spoon some alfredo sauce over the noodles. Garnish with fresh parsley and black pepper. Serve with the stuffed mushrooms. I know. Looks amazing, eh? It is, trust me. Or make some and find out!

As mushroom lovers, we both enjoyed this meal a great deal. I am also a bit too fond of pasta and yummy, creamy sauces, so I ate a little too much again. Laura is not as big on pasta, but agreed it was still good. She also didn't think her stuffed mushrooms were as good as Missy's. She gave it an 8, which I think is crazy.

Caramel Crack

Caramel corn for supper? What tha...?

Leftovers for Supper

No, we did not have caramel corn for supper, or, as we call it, Caramel Crack. What we had for supper was a piece of leftover pizza each, right after work, followed by leftover Scarborough Fair stew a couple hours later. Both were yummy and sustaining and hit the spot!

But, I don't want to focus on our leftovers, today. Boring. Instead, I want to tell you about my should-be famous Caramel Crack recipe, that Laura has been trying to get me to make for weeks.

How to Make Caramel Crack


Caramel Crack

I discovered this recipe years ago when we lived in Fredericton and were on a tight budget. I actually bought all the ingredients tonight at the Bulk Barn for less than 6.00, with the exception of the vanilla and corn syrup, which I already had some of.

Total Ingredients:
  • 1/3 - 1/2 cups unpopped popcorn
  • 1 - 2 tbsp oil (I use coconut)
  • 1 cup pretzels
  • 1/2 - 1 cup nuts
  • 1 cup brown sugar
  • 1/2 cup butter
  • 1/4 cup corn syrup
  • 1/2 tsp baking soda
  • 1 1/2 tsp vanilla

Other Items Needed:
  • Saucepan
  • Cookie sheet
  • Parchment paper

Popcorn

I have never made this with microwave popcorn, but it might work. Instead, I pop it the old-fashioned way in a large pot with a lid.

How to Make Old-Fashioned Popcorn:
  1. Add 1 - 2 tbsp oil to the pot, and heat the oil on medium heat with a few kernels of corn. 
  2. When one or two of the kernels pop, it's time to add the rest of the kernels, about 1/3 - 1/2 cup.
  3. Popcorn is done when you can count more than 2 seconds between pops.

This should make about 5 or 6 cups of cooked popcorn. There's a bit of a trick to it, because you need to agitate the pot while it's popping while leaving the lid on but cracked so that steam can escape. It's definitely a job for two pot-holdered hands, since the pot will get quite hot (mine is stainless steel, so heat conduction be happening) and sometimes the popcorn will escape through the crack and come flying at you, or will hit your hand. But, that is not why it's called crack.

Dry Ingredients

5 - 6 cups popped popcorn
1 cup pretzels
1/2 - 1 cup nuts

Combine all the dry ingredients into a very large bowl. Just grab the largest one you have, that'll be the one you want. If you don't have a large enough one, divide the dry ingredients into two separate bowls.

The Caramel

1 cup brown sugar
1/2 cup butter
1/4 cup corn syrup
1/2 tsp baking soda
1 1/2 tsp vanilla

Super hot boiling caramel

Measure the sugar, butter and syrup into a saucepan, and bring to a boil over medium heat. Once it is boiling, turn heat down to medium-low and boil for exactly 5 minutes. When the time is up, remove from the heat, add the baking soda and very quickly beat it into the caramel. It will foam. Then add the vanilla and very quickly beat it into the foamy caramel. It will sputter, but the caramel will turn glossy again.


The Final Steps

  1. Pour the caramel onto the dry ingredients and, using a large mixing spoon or wooden spoon, stir together until all the dry ingredients are coated. 
  2. Pour the coated mixture onto two parchment-lined baking sheets.
  3. Bake in a 250 (degrees F) oven for 20 - 30 minutes to harden. 
  4. Remove from oven.
  5. Let cool.
  6.  Break into pieces. 
  7. Serve to all the caramel crackheads you know.
