The bun was kind of hard, but otherwise it was pretty good. Great when you're in the mood for an oven sub. I give it a 7.5.

Chicken Club for Vegetarians

When you're a vegetarian and craving that familiar old sandwich, just go ahead and make one. We had to use a couple substitutes, but it was, for all intents and purposes, a chicken club.

I know the question everyone wants to know is what is used for "chicken"?  And, what of the bacon? Ahhh, yes, What, indeed?

The "Chicken"

Atlantic SuperStore sells a great soy version of vegetarian chicken that we really like. It looks like chicken and it tastes a lot like chicken, although you can tell it's not really chicken. It's a good substitute, especially for a sandwich, or a barbequed chicken burger.

Unfortunately I don't remember the brand we buy, since we always throw the enormous box out and store the interior bag in the freezer.

The "Bacon"

We've tried a few versions of "bacon" since we gave up eating meat but we agree that coconut bacon is the best. Yes, you can slightly taste coconut, but it's really more of an aftertaste or a faint underlying flavor. The main flavors of bacon are all there - sweet, salty and smoky - as well as the meaty texture. We use this recipe but tweak it a bit. We order our coconut online, 4 or 5 bags at a time.

It only takes about 25 minutes to make it, and that includes the 20 minutes to cook it.

Our recipe:

Ingredients
2 cups coconut
2 tbsp maple syrup
1 tbsp soy sauce
1 tbsp liquid smoke
1 tsp smoked paprika

Directions
Mix last four ingredients and gently toss with the coconut. Spread over parchment-covered baking sheet and cook at 300 F for 20 minutes. Check on it and turn at least twice if not thrice during cooking because it burns quickly.

We did get to use tomatoes and late lettuce from the garden for these tonight. Laura's so smart to plant lettuce all summer.

We used a third slice of bread just to make them more clubby, but I suspect it would have been a substantial enough sandwich with only two.

My Egg Salad Recipe

Boil eggs. Mash them up. Mix with mayo. Tonight's egg salad also has 1 1/2 or 2 tbsp whole grain mustard in it.

We almost always have BBQ chips with egg salad sandwiches but I opted for lettuce on this one. Garden fresh.

We used whole wheat diabetic bread simply because someone at work said it's "the BEST bread EVER". It's not bad. You don't miss the sugar and the texture is nice.

I rate my sandwich a...7. Good, but not as good as say...roasted veggies.

Sometimes the simplest meals are the tastiest. A fried egg with processed cheese on a toasted sesame bagel might not be the healthiest, but people eat worse things, and it was thoroughly enjoyable. I make perfect eggs. Gets a 9.

Also, I miss Carrie Weeks. A lot. Boooo :(

Creamy Tomato Soup & Grilled Cheese

I wanted tomato soup but didn't want to have canned soup, so Laura found me a recipe and I made some.

Creamy Tomato Soup & Grilled Cheese

Creamy Tomato Soup

Ingredients

Original recipe here
9 tomatoes, chopped
1 onion, chopped
1 carrot, sliced
2 tbsp butter
3 cups vegetable broth
2 tbsp balsamic vinegar
1 cube frozen basil (frozen in ice cube trays)
5 tsp sugar
2 tsp salt
10 whole cloves
Several sprigs of oregano
3 basil leaves
1 1/2 cups coffee cream
Compliments Garlic Cheddar Croutons

Directions

Wash and chop your veggies. I soaked the tomatoes in a water/vinegar solution for 20 minutes.

Melt the butter in a stock pot and add the chopped carrots and onions. Cook on medium low heat while you chop the tomatoes and add the tomatoes as you get them chopped.

Sautéing vegetables

Then add the salt, sugar, vinegar, cloves and vegetable broth. Boil for 20 minutes to let flavors meld.

Cool the mixture a bit and remove the cloves,


then blend in batches, adding each batch back to the pot.

Bring to a simmer then turn heat down and stir in the frozen basil and fresh herbs.

Add the cream last and serve.

Pita Pit Falafel

Welp. I did it again. Did not take pics of our food. I had great intentions and even snapped one of Pita Pit when I got there. Ordered our falafel sandwiches, had a say with Greg Grattan who was picking up his and Vanessa's dinner as well, then I took my sandwiches home and we ate. Then remembered the camera.

I like Pita Pit. The sandwich is pretty much always the same thing. I got falafel with baba ganoush and lots of vegetables. I rate it an 8.
