The bun was kind of hard, but otherwise it was pretty good. Great when you're in the mood for an oven sub. I give it a 7.5.

We had good intentions of making some real food, but it never came to fruition as Laura was having back pain and I was painting.

Chicken Club for Vegetarians

When you're a vegetarian and craving that familiar old sandwich, just go ahead and make one. We had to use a couple substitutes, but it was, for all intents and purposes, a chicken club.

I know the question everyone wants to know is what is used for "chicken"?  And, what of the bacon? Ahhh, yes, What, indeed?

The "Chicken"

Atlantic SuperStore sells a great soy version of vegetarian chicken that we really like. It looks like chicken and it tastes a lot like chicken, although you can tell it's not really chicken. It's a good substitute, especially for a sandwich, or a barbequed chicken burger.

Unfortunately I don't remember the brand we buy, since we always throw the enormous box out and store the interior bag in the freezer.

The "Bacon"

Original recipe
We've tried a few versions of "bacon" since we gave up eating meat but we agree that coconut bacon is the best. Yes, you can slightly taste coconut, but it's really more of an aftertaste or a faint underlying flavor. The main flavors of bacon are all there - sweet, salty and smoky - as well as the meaty texture. We use this recipe but tweak it a bit. We order our coconut online, 4 or 5 bags at a time.

It only takes about 25 minutes to make it, and that includes the 20 minutes to cook it.

Our recipe:

Ingredients
2 cups coconut
2 tbsp maple syrup
1 tbsp soy sauce
1 tbsp liquid smoke
1 tsp smoked paprika

Directions
Mix last four ingredients and gently toss with the coconut. Spread over parchment-covered baking sheet and cook at 300 F for 20 minutes. Check on it and turn at least twice if not thrice during cooking because it burns quickly.

We used a third slice of bread just to make them more clubby, but I suspect it would have been a substantial enough sandwich with only two.

I have to give it a 10. It was delicious and fresh and satiated my craving for a toothsome sandwich. Laura gives it a 12.

Recipe here
Laura used the original recipe but made half again as much. And we used meatless Yves Spicy Italian Sausage. We also used some carrots, garlic, herbs and zucchini from the garden and some tomatoes and cheese from the store.

Sauce:
2 tablespoons olive oil
1 1/2 cups onions, finely chopped
2 cups carrots, finely chopped (1 cup)
6 cloves garlic, minced
1 cup water
2 cans (28 ounces) crushed tomatoes

Simmer above ingredients for 45 minutes.
Add:1 pound diced veggie sausage
Coarse salt and ground pepper

This was excellent and I have to say, total 10. The biscuits are light and fluffy inside and crispy on the outside. Laura loved it and also gave it a 10!

I had dinner at Mom & Dad's and Dad barbequed chicken burgers. He also barbequed "chicken" burgers, which they got for me! How thoughtful is that???

It was a good-sized burger and I only had room for one, but the other one is in the fridge for lunch tomorrow. Whoop!

These. Were. SOOOOOOoooooOOOO. Good. Soy or not, they were amazing. The texture was so real, I broke pieces off to inspect them a couple times, but I saw the frozen patties in the bag and read the ingredients myself. I wish I had taken note of the brand, but I'll find them.

Corn Fritters!

We love them so. They are simple to make and very cheap. 'Cept for the maple syrup, but some things are just worth it. We make a good homemade pancake syrup with butter, sugar and maple flavoring but, naturally, it's not as yummy as the real maple tree by-product.

Some corn fritter recipes are pretty fancy, but I'm not about fancy cooking, and besides, we've tried one of those fancy corn fritter recipes before and it was no better than this one. Here's how I make mine:

Ingredients
2 cups pancake mix (just add water kind)
1 can cream corn
1/2 can kernel corn
1/2 cup water
Oil for frying
Paper towel for draining

The pic below shows my corn fritter ingredients with the exception of the butter. Not sure what the butter is doing there. I used it for the potatoes, not the fritters.

Directions
Mix the pancake mix, corn and water to make a batter. Adjust as necessary, it should not be runny or doughy enough to form in a ball, but enough to drop in thick spoonfuls into the oil. Thicker than muffin batter. Thinner than cookie dough.

Drop into the oil and cook 3 or 4 minutes on each side. Drain on paper towels.

Herb & Scape Fried Potatoes

These were sooo good. If you haven't had scapes but would like to give them a try, let us know and we'll try to save you a few. Locals only, of course, for fresh sake.

I fried these in butter which was a naughty thing to do, but then I threw in some garlic scapes, scallions and fresh herbs and redeemed myself by adding nutrients and antioxidants. hehe

Veggie Sausages & Fiddleheads

Tonight's meal was so quick and easy that even with grocery shopping to do first, we had not only finished eating but also had the clean up done before 8:00 pm. How great is that? Left me with an hour and a half to be outside loving the weather.

These aren't bad. The texture is a little dry, as in not greasy like meat sausages, and they could be spicier, but they're pretty good. They're more enjoyable because you know that not once will you bite into cartilage, bone or any other questionable texture, and I love that.

These are the last of the last batch of fiddleheads I bought, so that's it for this year. See you next year fiddleheads! There are a few perogies in the picture below, as well. I made them for Laura because I wasn't in a perogie mood.

Riverside Subs

Today was a beautiful day and we spent it mostly outside in the garden. I grabbed one of those coleslaw kits from Sobeys along with some Provolone, Yves "ham" and sub buns to make some yummy sandwiches for supper.

  • Sub buns
  • Dijon mustard
  • Yves "ham"
  • Provolone cheese
  • Coleslaw mix
  • Italian dressing

Bake in the oven for 15 minutes at 325 degrees F. Great to have with wine after a long day outdoors.
