We got this recipe out of the Beat That cookbook, which has quite a few awesome recipes that we use. You can see by the photo below that it's been around the block a few times.

Pistachio Tortellini
Pistachios are expensive. We got just over a cup of them at the Bulk Barn for about $10.00. Crazy, ridiculous price to pay. On a good note, the other ingredients were fairly affordable, but altogether the meal probably cost about 25.00 - but then, we were out of both coffee cream and olive oil, ingredients we would normally have on hand. We could have eaten out in a restaurant for that price, however, it would not have been as good.
Ingredients
1 cup pistachios, shelled
5 tbsp olive oil
2 tbsp lemon juice
2 cloves garlic
1/2 cup coffee cream
1/2 cup grated Parmesan
1 lb tortellini

Pistachio Sauce
Heat the pistachios in 1 tablespoon of olive oil in a skillet over medium heat for a couple minutes. Stir them to keep from burning. Reserve 1/4 cup for garnish and throw the rest into a food processor or blender and puree them with the olive oil, lemon juice, and garlic until smooth. Add the parm and coffee cream and blend another 5 or 10 seconds.

Tortellini
Cook according to the package instructions. We buy fresh three cheese tortellini in the deli aisle, and it's between $5.00 - 8.00, depending on how much we buy.

Once cooked, drain it, return it to the pot and mix the sauce in. Serve with the reserved pistachios and more Parmesan. This is the best pasta recipe in the world.

Plus, It's Quick!
One thing worth noting is that this meal comes together fairly fast. There is a bit of prep with the garlic and parsley mincing, and with toasting the pistachios, which only takes a few minutes, actually. Oh, and there is the lemon squeezing, but that is just fun stuff there.
The Greatest Garlic Bread
This is not the Texas Toast that we often buy, which is already prepared and ready to pop into the oven. Noooo...this is an amazing recipe Laura has been using for ages that is better than any other garlic bread I've ever had. By the way, this recipe is also from Beat That.
Garlic bread, before toasting
Ingredients
1 loaf of Italian bread, sliced
1/2 cup butter, softened
3 cloves garlic, minced
2 tbsp mayonnaise
3 tbsp grated Parmesan
1 tsp fresh parsley, minced
1 tsp dried basil
1/4 tsp dried oregano
1/2 tsp lemon-pepper seasoning

Basically, throw everything except the bread into the food processor and whiz it up. Spread it over the slices, spread the slices on a foil-lined baking tray and bake in middle rack at 375 degrees F for about 10 - 12 minutes.
Delicious, High-Carb, High-Cal Meal
The Greatest Garlic Bread and Pistachio Tortellini are a match made in heaven. This is an incredibly rich and fattening meal, and worth every bite! On a good note, it doesn't require big portions to fill you. Bob and Jillian would never endorse it, but if you want a delicious treat or want to impress your spouse or guests, this would be it.

Laura asked me how it was when I was about three bites in. I didn't really want to stop chewing long enough to answer her. I told her it was an 11, and I still stand by that. Seriously, one of my favorite meals ever, and definitely my favorite pasta meal.
