Veggie Ground
One of the things we thought we would miss when we stopped eating meat was Sloppy Joes. But, that was because we were unaware of how awesome some of the substitutes can be. Like Veggie Ground, for instance. It's soy-based but simulates a ground beef texture. Not that you can't tell the difference. You can. But it's not at all bad. And for making Sloppy Joes, it does a fine job.Recipe
Laura makes this all the time using this recipe from The Recipe Hall of Fame Cookbook; Winning Recipes from Hometown America.1 lb ground beef (we substituted with veggie ground)
1 onion, chopped (we also chopped half a red pepper)
2 tbsp chili powder
3 tbsp barbeque sauce
Dash Worcestershire sauce (use a vegetarian variety)
1/2 cup ketchup
1 tbsp sugar
1/2 cup milk
2 tbsp vinegar (we used balsamic)
1 tbsp flour
Salt and pepper to taste
1 tbsp oil for frying (since we don't use ground beef)
Directions
Mix dry ingredients.

Combine wet and dry ingredients.

Heat the oil in a stainless steel frying pan and add the chopped onions and peppers. Cook until soft.
Sautéed peppers and onions
Toast buttered buns in a skillet.
Buns toasting
Add the chili sauce to the sautéed peppers and onions and heat for a minute, then add the veggie ground. It's already cooked and only needs to be heated, so leave it in the skillet to heat for 2 or 3 minutes, stirring to heat throughout.
Serve on toasted buns.
