Loaded Baked Potato & Asparagus with Hollandaise

Day 48

I know potatoes are naughty, even on their own, without loading them up with cheese and stuff. I know this...and I don't care.

This potato is loaded with:
  • Shredded sharp cheddar cheese
  • Chopped green onion
  • Sautéed mushrooms

Bake the potato about an hour at 400 F.

Unwrap and slice down the middle. Add the cheese, mushrooms and scallions and pop it back in the oven for another 10 minutes. After it was cooked, I also added butter, salt and pepper and then served it with sour cream. Hardly any calories at all!

Asparagus with Hollandaise

Asparagus is a yummy green veggie that is even better with a quarter cup of buttery sauce on it.

I cook asparagus for about 15 minutes on medium heat in about 1/2 cup of water in a non-stick skillet. I add another 1/2 cup after the first 7 minutes.

I've said it before and I'll say it again. It's a potato. Potatoes get a default 10. haha
