Roasted Round Things

Day 64

What else are you gonna call a dish that looks like this?

Potatoes, mushrooms, shallots, onions, Brussels sprouts & carrots

Supper had to be quick because I had to make some jam tonight, which I did in the hour it took for supper to cook.

Round Things

  • Yellow Potatoes
  • Carrots
  • Onions
  • Shallots
  • Mushrooms
  • Brussels Sprouts

Seasonings

  • Sea Salt
  • Pepper
  • Garlic Mrs. Dash
  • Thyme
  • Butter

Directions

I washed the potatoes, Brussels sprouts and mushrooms. I peeled the onions, shallots and carrots, then diced the carrots into 1 - 2" lengths. Everything except the carrots went into the roast pan whole, since the potatoes and onions were tiny ones. You can see how cute they are from the photos.

Next, I sprinkled on some seasoning, and dotted with about 2 tbsp diced butter. I also added 3 cups of water, then, into the oven it went!

Prep Time: <10 minutes
Cook Time: 1 hour at 400 degrees F

Sooo easy. And so yummy. And probably nutritious. I buttered mine and added a bit more S&P and also added some of the drippings from the roast pan. It's kind of like gravy.
