Fried Eggs & Potatoes with Toast

Day 52

Breakfast for supper! Why is this stuff considered breakfast food anyway? Regardless, eggs and toast are good anytime of day and fried potatoes, well...any day, any time...with or without ketchup. Always with onions, whenever possible. So good.

Fried Eggs & Potatoes with Toast

Ingredients

4 eggs
2 potatoes
4 slices of bread
1 onion
5-8 tbsp butter
Salt
Pepper

Fried Potatoes

There are so many ways to make fried potatoes, and I've made them just about every way there is. You can start from potato in almost any form, from raw to baked or boiled, whole or mashed. You could even shred them and make hash browns. Some people call any fried potato hash browns. It's all good.

Tonight, I wrapped a couple potatoes in foil and threw them in the oven right after work. After an hour, I tossed them outside in the snow to cool off. One of the rules about frying potatoes is that you start with cool potatoes; otherwise they will have a gummy texture. Since we had to wait an hour and 45 minutes for usable potatoes, we took a trip to Tim's for a muffin to tide us over. Heheheh

Once cooled, slice them up and fry them in oil or butter - I used butter - with a chopped onion on med-high for 5 or 6 minutes until brown, flip them and turn heat down to med-low to finish browning. Serve with salt and pepper. Sometimes we cook them with herbs, fresh or dried. But, not tonight.

Sounds easy, but if you've ever fried an egg you'll already know that it's not as easy as it looks. Well, if you're frying it "over hard" it's pretty easy. But we both like ours fried "over medium", which requires a knack for knowing what temperature to cook it, when to flip it, and so on.

I start with adding butter to a stainless steel frying pan and setting the heat almost to med-high; just past half-way. When the butter starts to sizzle I give the pan a shake to disperse the butter evenly then crack an egg into the pan, then another on the other side.

They cook very quickly, so the moment I get the eggs in the pan I depress the toaster to start toasting the toast.

You have to watch the eggs closely, and the whites will start cooking from the bottom up, creeping towards the yolk. When the border between the white and the yolk begins to bond, it's time to flip it. I always wait until they've been flipped to add any seasoning. The flip side should only take about a minute to cook, then it should be removed. Toast should be popping right around the same time. Seriously, it takes about 4 or 5 minutes to fry eggs. Your potatoes should be pretty much cooked by the time you start your eggs.

With the exception of pre-cooking and cooling the potatoes, this is a very quick 15-minute meal. Those are my favorite kinds on my nights to cook. Easy peasy and very little mess (another bonus).

I'll give this an 8. A meal I've had a hundred times, but always hits the spot. I mean, it's nothing fancy. It would have been a 6 but, potatoes.

Laura gave her compliments to the cook about 3 bites in, so I'll take that as a good sign. She's laying down, so I'll rate this for her. She'll give it a 7 because I'm sure I impressed the hell out of her once again with my kitchen witchery, but she wouldn't up the score because of potatoes. Although, she did like them. A lot.
