Aghhh, it's Christmastime and we have literally been living off sandwiches and leftovers. So much to do, and so little time! Barely time to eat, let alone make a meal and blog about it, so I apologize for the lack of posts. I did take a few pics of the things we had for "supper", if you could call it that.
I am short on time so I am combining these three days:

Leftover Taquitos
Very good warmed up...even better the second day, I reckon.

We just replaced the plastic wrap with foil and put these babies back in the oven for about 25 minutes until they were hot again. We had just enough salsa fresca to have the second time, but had to run out for more sour cream. Still, cheap meal. Sour cream was even on sale, for 1.99.

Friday, Dec 19 (Day 62)
Peanut Butter Sandwich
I wasn't going to eat at all, but that would just be foolish. So, I made a quick PB sandwich and ate it about an hour before bed. But, I did use the good peanut butter and had it on delicious Red Island potato bread. Soooo good. If you haven't tried this PB yet, you should. You won't go back to whatever kind you've been eating.

Saturday, Dec 20 (Day 63)
Egg Salad Sandwich
Also made on the Red Island potato bread, which is just white bread, but extra chewy and sticky and soft. We love it.Laura's egg salad contains pretty standard ingredients today:
- Boiled eggs
- Compliments whipped salad dressing
- Chives
- Sea salt & pepper

More salt and pepper sprinkled on top of mine. Not elaborate, but was tasty and filling and somewhat nutritious, I think.
