Triple B's & Chili Wedges

Day 32

Yesterday I did a stupid, stupid thing. I put the rest of the Butter Bean Burgers in the freezer! The only thing I can attribute such poor judgement to is the late hour at which we ate and put everything away. Of course we were going to want them again today...and possibly every day...mmmm

Took these bad boys out of the freezer and thawed them out. See? Even has yesterday's date on the freezer bag, as if we were going to need that information several months own the road. *snicker*

We re-fried them in coconut oil. and topped them with the same as yesterday minus the mushrooms: red onion, tomato, lettuce.

Tonight though, Laura decided to make an avocado salad dressing which we had enjoyed on some different veggie burgers in the past.

Creamy Avocado Salad Dressing 

Original recipe here
1 avocado
Juice of a lime
3 tbsp olive oil
1 clove of garlic
1/4 tsp kosher salt
1/4 tsp pepper
Lil bit of water

Whiz it all together in a food processor. Or blender if the blade broke on your food processor and you are temporarily without one. Look at how delicious it looks in the picture below!

Chili Wedges

This is a recipe we have been making for years because it's one of the tastiest ways we've found to use potatoes. The great thing about them is that they're baked, not fried, but they are coated with quite a bit of butter. So, there's that.

Recipe
2 large potatoes, cut into wedges
3 tbsp butter
3 tbsp chili powder
2 tsp sugar
1/4 salt
1/4 pepper

Melt the butter and mix in the chili powder, sugar, salt and pepper. Baste each wedge with the chili mixture. Bake at 400 degrees F about 30 - 40 minutes. Check for done-ness. They will be tender and begin to caramelize. Serve with sour cream.
