Lentil Loaf Sandwiches & Frites

Day 30

We. Are so fancy.

Leftover lentil loaf is apparently used just as leftover meatloaf often is - in a sandwich! Only, instead of ketchup as the condiment, Laura made a double batch of the glaze.

Lentil Loaf Sandwiches & Frites

Glaze

6 heaping tbsp ketchup
2 tbsp balsamic vinegar
2 tbsp pure maple syrup

We sliced it and arranged the slices on a baking sheet and put it in the oven for 15 minutes on 350 degrees F.

Frites

Fancy name for French fries.

Chop 1 baking potato into 1/4" slices, then chop the slices into 1/4" strips. Fry in sunflower oil for about 10 minutes on medium high heat. Fry until golden brown. Remove from oil into a paper towel-lined bowl to absorb some of the oil. Sprinkle with sea salt. Serve with ketchup.

The slices were transferred from the baking sheet to a slice of potato bread, covered with sauce, and topped with another slice of bread.

Heavenly Hasselback Sweet Potatoes

Recipe here. Sooo good. Next time I would substitute the craisins for raisins, but this is good stuff. Here are some pics we took while Laura was making it.

Welp. I've never had a meatloaf sandwich, but a lentil loaf sandwich is very tasty indeed. Laura said next time she will have her sandwich with ketchup instead of the glaze. I'm not so sure; it was really super good with the glaze. And, the frites were good as well. As frites are. 

And, the very best thing about having leftovers? Quick prep time! It's 7:49 and not only is supper behind us, but even the blog is done.
