Butter Bean Burgers

Day 31

The link to this recipe was given to me by a dear friend from NJ who gives us all kinds of kitchen and garden ideas! She lives in a warmer climate zone, but we still love her.

So, here is the link to Butter Bean Burgers recipe, but I am also going to explain our process, as always.

Butter Bean Burger

Burger Ingredients/Grocery List

Butter beans (frozen, canned or dried)
Small onion
Jalapeno pepper
Saltine crackers (we used bread crumbs)
Egg
Cheddar cheese
Garlic powder
Salt and pepper to taste
Vegetable oil

Topping Ingredients

Red onion
Mushrooms
Tomato

Operation Procure Butter Beans

So, my job was to get the butter (lima) beans. This was not as easy a task as you might think. I went to Sobeys. No frozen butter beans. No canned butter beans. No dried butter beans. Even asked Cailin, who was nearby stocking shelves and she regretfully advised they did not have any butter beans in the store. I was all like, wth. So, ok. I went to Atlantic. No frozen butter beans, no canned butter beans, but wait - they actually had a bag of dried butter beans there. Thank God. I mean, this delays supper for an hour and a half while they cook, whereas frozen or canned ones would have made for a quickie meal. But, at least I did accomplish my mission. Woot!

Meanwhile, Back at the Ranch

I got home just after 9:00 pm and Laura had the onions and jalapenos chopped, and had her breadcrumbs and garlic powder measured out. She was ready to rock this recipe out.

Prepared ingredients

Pictured above: Red onion (for topping), white onion and jalapeno in the bowl, sharp cheddar in the black measuring cup, and breadcrumbs and garlic powder in the round measuring cup.

However, there were still butter beans to cook. So we put them on, then waited.

Patty Recipe

1 (15 ounce) can butter beans, drained
1 small onion, chopped
1 tablespoon finely chopped jalapeno pepper
1/4 cup gluten-free breadcrumbs (like Panko)
1 egg, beaten
1/2 cup shredded Cheddar cheese
1/4 teaspoon garlic powder
Salt and pepper to taste
1/4 cup corn meal
1/4 cup vegetable oil


Mashing & Mixing

The beans had to be mashed then cooled a bit before mixing in the cheese, egg, breadcrumbs and seasonings. Then they were shaped into patties, rolled in corn meal and ready to fry!

The Frying

Heat the oil and fry for 5 minutes on each side. They should be golden brown. We always toast our buns too. Way better.

Ta-da! Altogether this made 6 patties, and we're aware enough by now to know we can't eat more than one apiece, so 4 of them are going in the freezer for future suppers when we're desperate for something quick. I'm sure you'll be made aware when the time comes...

Our dear friend in NJ was right about these. We've had a lot of different veggie burgers over the years, but this were definitely THE best. Super crispy, and a delicious, buttery flavor. So excited about those ones in the freezer. And the other ones that Laura plans to make using the other 2/3 of the mashed butter beans!

Laura gives this burger "an easy 10". I concur. 10.
