Since when is dip a meal itself? Since we made too much food for an event and had this fantastic layered bean dip left over.
Layered Bean Dip
All we had to do was put in in the oven, heat it and serve it with chips. Actually, we served it with "salsa bowls".

Recipe
Layer 1 (bottom): Refried pinto beans2 cups dried beans (quick soaked*, cooked until tender).
Sauté an onion, a couple jalapenos and 3 cloves garlic (healthy saute with a little water) until onions are clear.
Add half the beans to the onions.
Cover with vegetable stock and simmer.
Mash the beans and then add the other half of them.
*Quick soak: Bring to a boil, turn off heat and let sit for an hour.
Layer 2
1.5 cups sour cream
1 package cream cheese
Mix the two together. Spread over bean mixture.
Layer 3
Salsa verde; pour over sour cream mixture.
Layer 4
Grated cheddar
Layer 5
Top with chopped peppers and black olives.
