BLT Wraps

Day 34

We have so many vegetables in the fridge to use up that we decided to have some veggie wraps. But, this page is more about the "bacon" we made to have with them.

But First...More Triple B's

Earlier today, Laura made nine more butter bean burgers (triples b's!) with the rest of the cooked lima beans and I ate two...one with and one without a bun and toppings. They are soooo good. They're my new favorite thing.

That was about 6 pm, and it's now after 11 pm and I'm still not hungry, so I didn't make myself a wrap. Laura, however, wasn't as piggy as I was earlier (no offense to pigs) so she was hungry and made this awesome BLT with avocado.

If you're like "Wut?", yep, BLT...bacon, lettuce and tomato. But nope, not real bacon.

Finding Coconut

We saw this coconut bacon recipe online and thought we'd try it. Sounded pretty easy. All I had to do was head out and and pick up some coconut flakes. By "flakes", I don't mean the kind that they sell in the baking aisle. This coconut is bigger, like big, shaved-off strips. Sobey's didn't have it. Atlantic SuperStore didn't have it. Bulk Barn didn't have it. Found some online - guess we'll have to order it, because it looks like we're going to be making this a lot. And I'm not all that interested in cracking open, peeling and thinly slicing a coconut every time. Especially since it's always a crap shoot whether you get a fresh coconut or not. Apparently a lot of coconuts you get around here are moldy, and the first one I bought was. Gross. I made Laura try it, just to make sure and she was super mad because I didn't tell her I thought it might be bad before she put it in her mouth.

So, I bought a second one and it was good. Cracked it, peeled it, then Laura sliced it up into thin strips. I dehydrated them for a few hours before making the "bacon".

Ingredients

Along with the coconut, the other ingredients, with the exception of the soy sauce, had to be added to my grocery list since we were fresh out of smoked paprika, liquid smoke and real maple syrup. Actually, the paprika and liquid smoke were new ingredients for us. We would have maple syrup in the house all the time if we could afford it. Laura wants to tap the maples in the yard and make our own every spring.


Soy sauce, maple syrup, liquid smoke & smoked paprika

Recipe

1 cup large, unsweetened coconut flakes (not regular shredded coconut!)
1 tbsp soy sauce
1 tbsp liquid smoke

1 tbsp maple syrup
1 tsp smoked paprika


Directions

This really was quick and easy to make. Mix the soy sauce, liquid smoke, maple syrup and smoked paprika and pour over the coconut flakes in a bowl. The amounts are reduced and approximated from the original recipe, but you can add more or less of any ingredient to create your favorite flavor, depending on whether you prefer a smokier, saltier or sweeter type of "bacon".

Gently toss together for about half a minute until they're all completely coated, then lay them all out on a parchment-lined baking sheet. 

Bake at 325 degrees F for about 15 minutes. Turn each piece every 5 minutes and watch closely so they don't burn. They're like toasting any nut. They go from not cooked to burnt within 30 seconds. Ours burned a little.

Avocado salad dressing

Wrap it all up in a fresh tortilla and it's ready to go! Quick and easy. Sorry about the blurry pics! My camera had a smudged lens. Booo...

Skip the Swiss cheese and this sandwich is a vegan delight. :)
