This is a dish we used to have with chicken, and Laura made this for us a lot over the years. It was a recipe adapted from one of Martha Stewart's recipes, which generally turn out pretty well since Martha knows her way around a kitchen and then some.

So, I didn't post on Friday or Saturday this weekend. Friday we were a bit hungry after work and stopped at A&W for fries to tide us over. Not worth blogging about, although we both love A&W Russet Thick Cut fries. Later, we scrambled a few eggs and toasted a couple English muffins and that was supper. Not even worth taking a picture of. Fridays could be a crap shoot any given week as I find I'm usually exhausted by the end of the work week.Saturday I wasn't here for supper, and instead dined on beer and finger food at a party. Vegetarian spring rolls, fruit platter, crudité with a pretty yummy dip and wavy Lays. Thank you to Julie and Mom an whomever else brought food!

Laura made Gnocchi with Sage & Brown Butter last night for her own dinner. We had the leftovers today for lunch, reheated in a non-stick skillet, so I had a chance to try it and get a pic of it. It was fantastic!

Back to the Peanut Thai Noodles & Broccoli
This is the fancy name for it. We usually just call it Peanut Butter Spaghetti. We skip the chicken part of this meal now, but we still feel like the rest of this dish stands on its own just fine. The noodles are tangy and delicious and the broccoli has a nice kick.Original recipe
Garlic Oil
This oil mixture is used for the Thai Peanut Sauce recipe below and the rest is tossed with the broccoli.Recipe:
6 garlic cloves, peeled
1/2 to 1 teaspoon red-pepper flakes
Kosher salt
4 tbsp sunflower oil
Mince the garlic and mix with the pepper flakes and a pinch of the salt. On a cutting board, with the side of a large knife, mash them together. This is a bit tougher to explain, so I shot a quick video of Laura showing the technique:

Once it's well mashed, mix it into the oil. Voila!
Thai Peanut Sauce
This sauce is sweet, salty, spicy and sticky and is mixed with spaghetti noodles. Soooo good.Recipe:
5 tbsp crunchy peanut butter
4 tbsp soy sauce
2 tbsp rice vinegar
2 tbsp brown sugar
2 tbsp of garlic oil
Mix the above ingredients in a small bowl.Cook a package of spaghetti and mix the sauce in.

Broccoli
Cut 2 heads of broccoli into florets, wash and steam for about 6 minutes. Toss the steamed broccoli with the remaining spicy oil mixture.

OMG, this recipe is really worth a try. We both love it, obviously; it's one of our favorite recipes! I give this a 10 tonight. Laura rates it a 9.5. And, I could be wrong, but I think it's also vegan.More notes: This is not diet food! It will also leave you with serious garlic breath. All worth it, though. hahaha
