Patricia came over to make amazeballs with Laura and they both made a double batch. I helped slightly. Mostly I helped myself to a pint of rum hahahaha...
Swedish "Meatballs"
Swedish "Meatballs" Gravy
Ingredients
16 amazeballs (see recipe for meatless meatballs)7-8 large mushrooms
1/2 large onion
2 tbsp butter
1/3 cup oil
2 cups vegetable broth
1/2 cup sour cream
Directions
- Sauté mushrooms until liquid is evaporated, set aside.
- Dice 1/2 large onion and add to hot pan; healthy sauté until translucent.
- Add butter and 1/3 cup flour and combine well.
- Cook for a minute then stir in 2 cups veggie broth.
- Simmer until thickened, adding water if necessary.
- Add mushrooms and meatballs and heat through.
- Remove from heat and stir in 1/2 cup sour cream.
- Serve over egg noodles.

We always get the big fat dumplings. This time I got the right ones, instead of just extra large.
