Swedish "Meatballs"

Day 113

Patricia came over to make amazeballs with Laura and they both made a double batch. I helped slightly. Mostly I helped myself to a pint of rum hahahaha...

Swedish "Meatballs"

Swedish "Meatballs" Gravy


Ingredients

16 amazeballs (see recipe for meatless meatballs)
7-8 large mushrooms
1/2 large onion
2 tbsp butter
1/3 cup oil
2 cups vegetable broth
1/2 cup sour cream

Directions

  1. Sauté mushrooms until liquid is evaporated, set aside.
  2. Dice 1/2 large onion and add to hot pan; healthy sauté until translucent.
  3. Add butter and 1/3 cup flour and combine well.
  4. Cook for a minute then stir in 2 cups veggie broth. 
  5. Simmer until thickened, adding water if necessary. 
  6. Add mushrooms and meatballs and heat through. 
  7. Remove from heat and stir in 1/2 cup sour cream.
  8. Serve over egg noodles.

We always get the big fat dumplings. This time I got the right ones, instead of just extra large.
