I couldn't resist blogging our brunch today, which was supposed to be breakfast, but someone (me) slept in too long so we didn't have breakfast until lunchtime. Laura made berry crepes and I fried some potatoes, and I took some pics so I figure an extra blog entry couldn't hurt.

The Weather Outside is Frightful
Today we are getting a blizzard with expected accumulation of 40 - 50 cm. Since they have been forecasting "a blizzard on Sunday" for days, we made sure our fridge and cupboards are well-stocked. We stocked up on bottled water and planned our meals for the next couple of days, so hopefully we're all set.

I love the geranium in the kitchen window. Such a bright contrast to what's going on beyond the panes.
Raspberry Blackberry Crepes
We had these same crepes yesterday afternoon and enjoyed them so much that I bought more berries last night so we could have them again today.Crepe Recipe

1 cup milk
2/3 cup all-purpose flour
1 pinch salt
1 1/2 tsp vegetable oil
2 tsp sugar
1 tsp vanilla
Laura makes the crepes because she's good at it. These crepes are like the ones she made the other night, only with sugar and vanilla added. Go here to see the savory crepe recipe and directions.
We served these crepes with a drizzle of maple syrup.
Filling
The filling is nothing other than raspberries and blackberries. That's the beauty of them. If you want to fancy them up more you could always mix some cream cheese with some icing sugar and vanilla or something, but berries themselves are simply delicious on their own. The only prep needed for the filling was to soak the berries in a vinegar/water mixture for 10 - 15 minutes to wash any pesticides or contaminants off them and then dry them on a clean or paper towel.

Fried Potatoes
1/2 onion2 potatoes
2 tbsp butter
1 tsp parsley
Salt
Pepper
I peeled and chopped the onion and potatoes, cutting the potatoes into 1" chunks, and fried them in the electric frying pan in the butter. I sprinkled them with salt, pepper and parsley, covered them and let them cook about 15 or 20 minutes on medium-low heat, turning them every 4 or 5 minutes.

Blood oranges are so pretty, and they really made the whole plate look nice, eh? They are generally sweet oranges, but these ones were a bit on the tart side. Still very good. And healthy! A wee bit healthier than the potatoes, but then, it's all about balance. hahaha

We were both in heaven during this meal. I definitely finished my plate, although I saved both a raspberry and a blackberry for my Cian, who loves fruit of all kinds, especially berries. There was a blackberry bush we used to visit on our walks and he would eat them right off the bush. lol
