Savory Spinach & Egg Crepes with Creamy Mushroom Sauce

Day 119

Just so you know, Day 118 was leftover Chinese from Tran Palace. Very yummy, again.

Day 119 (which was actually last night - I got behind) was Savory Spinach & Egg Crepes with Creamy Mushroom Sauce.

Filling

5 eggs
Spinach

The filling was simply scrambled egg with spinach. Five eggs and two handfuls of spinach.

Laura made very good crepes. They were soft and perfect.

2 eggs
1 cup milk
2/3 cup all-purpose flour
1 pinch salt
1 1/2 tsp vegetable oil

Mix all ingredients and pour 1/4 cup amount into a hot skillet, tilting the pan to coat the whole bottom. Flip it when it starts to get a little dry on top. You can tell.

Sauce

4 oz mushrooms
1/3 cup flour
1/2 cup coffee cream
1 cup water
Pinch of salt
Shake of pepper

The sauce was sautéed mushrooms, seasoned and made into a roux and cooked in cream and water.

Reviews/Comments

I felt it was missing something. Onion, or something crunchy. It did taste good, but I ate the filling and not much of the crepe itself. I rate it a 6.
