Eggs Benedictine

Day 116

I know we just had this, but Laura was having an amazeball sub with the last 5 amazeballs so I thought I'd be resourceful and use stuff that needed to be used. Like the rest of the asparagus. And one of the last 2 English muffins.

Sadly, I didn't get to use the English muffins before they went bad, after all. They both had a moldy spot or two, so I had to run out and buy more because I had my heart set on eggs benedictine by then. 

And my asparagus was already cooking.

Lunch Tomorrow

Above, that's potatoes on the front left burner. They're for my lunch tomorrow, along with the rest of the asparagus. Not for supper. I know that looks like a lot of potatoes for one lunch, but it's actually only one rather large potato. 


A Two-Egger

Usually we only have one egg and 1/2 English muffin, but we usually serve something else with it, like potatoes, or fruit. I figured I'd keep it simple and do two eggs and the whole muffin. It was a bit too much to eat, actually but I don't think one would have been quite enough. I gave the dog a piece of egg.

Since this is one of my all-time favorite meals, I have to give it a 9.5 or 10. It's always so good.
