Eggplant Basil Bowties

Day 203

Eggplant is my new favorite thing. This dish is similar to the one we had in April, but with no red pepper, therefore, I didn't think it deserved the nightshade name. There are four cubes of basil/olive oil, and an entire eggplant, along with coarsely chopped onion and mushrooms, minced garlic and three cubed tomatoes. It's made the same way though, using balsamic vinegar and sugar and served with parmesan.

Ingredients below:

Chopped eggplant (salted and draining), chopped mushrooms, onion, garlic, four cubes of basil, parmesan and three tomatoes.

Whole foods

Put everything in a pot, following the directions from last time, and cook for about 15 or 20 minutes. The pic captured more steam than food, didn't it?

So good. I rate it a 9. No awesome garlic bread to bump it to a 10 as a meal tonight, but it was still satisfying and delicious.

Laura: 8 1/2 or 9...if we had some nice, crusty Italian garlic bread it would have been a 9 1/2 or 10. It was very good.
