A friend posted the asparagus & egg recipe on my Facebook timeline and I thought I would give it a try, because it looked pretty good.

Pan-Roasted Asparagus with Crispy Fried Egg
Original recipe hereI followed the recipe pretty closely, but tripled the recipe and made way more of the breadcrumb mixture than I needed. I didn't use the parmesan, but it still made too much, and was still delicious. I'm not convinced it would have been better with parm.
Bread Crumb Mixture (Gremolata)
1 ½ tbsp extra-virgin olive oil6 tbsp panko bread crumbs
2 tsp grated lemon zest
Pinch of hot red pepper flakes
Pinch of salt
6 tbsp chopped Italian parsley
Cook the oil and breadcrumbs until brown. Set aside in a bowl.

Zest the lemon.

When crumbs are cool, mix in all the other ingredients.

Asparagus
The asparagus was the easy part. Wash the asparagus. Actually, I soaked it in a vinegar/water solution for 10 minutes, then drained it.

Sauté the asparagus in olive oil for about 6 minutes, turning a couple times. I did mine in two batches because I cooked the whole package. It was on sale by the way, and I got all this asparagus for like $3.50.

Crispy Egg
I couldn't cook the egg the way the recipe said. I did the crispy side, but couldn't resist flipping it to cook the other side for at least 15 seconds until the white part was cooked. I also broke the yolk when I flipped it, so it doesn't look pretty, but it turned out perfectly cooked, for me.

Herb-Roasted Potatoes
You all know by now how I feel about potatoes. They really make a meal complete, don't they? I felt like the asparagus/egg needed something else with it so naturally potatoes was my first idea. Herb-roasted ones were Laura's idea. I was just going to boil them.
Potatoes
Ingredients
5 potatoes2 tbsp olive oil
1 tsp oregano
1 tsp Italian seasoning
1 tsp sea salt
1/4 tsp freshly-grated black pepper
Directions
I just chopped the potatoes, tossed them with oil and herbs, seasoned with salt and pepper and cooked them in the oven until they started to brown and were tender. I cooked them at 400 degrees F for about 35 minutes and they were perfect. I made too many, so we're probably having them again tomorrow. Maybe with pancakes.

I would give this an 11 if I could. Amazing. So, thanks for posting, Deb! The lemony crumble was really good. We have lots left and I'm trying to figure out what else it would be good on or in. Pasta?Laura: Good. Eight. (Laura had her asparagus sans oeuf) Laura also loved that hers was vegan.
