We have this every year like clockwork. Of course we have the meatless version now (our 3rd year), but we used to have the corned beef version.

St. Patrick's Day Boiled Dinner
Ingredients
2 boxes vegetable broth4 cups water
1 onion
6 or 7 potatoes
4 carrots
4 parsnips
1/2 cup barley
1 small head of cabbage
1/2 tsp ground cloves
1/2 tsp black pepper
1 tsp salt
Directions
I cooked the barley in a small pot in a mixture of 1 cup vegetable broth and 1 cup water for about 1/2 hour.

Meanwhile, I did a healthy sauté with the chopped onion, then added the spices, then the rest of the broth and water, the carrots, parsnips and potatoes.

I covered it and brought it all to a boil which took about 15 minutes, then boiled about another 15 minutes before adding the cabbage.

Once the cabbage and barley were added, I boiled it for about 15 more minutes. Done-sies.

Leftover samosas last night, if you were wondering. Believe it or not, even better than the first night, and Laura and I both rated them a 12.
The Irish boiled dinner gets an 8 from both of us!
