Twice Baked Potatoes

Day 182


One of Laura's favorite ways to have potatoes is to twice bake them, which means cook them, mix the potato with cheese and veggies and bake them again. You can use any cheese or veggies you like or have on hand. For instance, broccoli and cheddar would be good. Ours are made with mushrooms and scallions.

Twice Baked Potato


Ingredients

2 potatoes
1/3 cup coconut bacon
10 mushrooms
2 tbsp butter
1/3 cup sour cream
1/4 cup chopped green onions
1/4 cup shredded cheese
1/2 tsp salt
1/4 tsp pepper
Cheddar, coconut bacon, sour cream, 
mushrooms, scallions 

Directions

Bake the potatoes an hour at 400 degrees F. Let cool 30 minutes. 



Baked potatoes

Cut potatoes in half and gently scoop out all the potato. Mash it up with a fork and some butter. Add the sour cream and stir in the salt, pepper, green onions, half the mushrooms and half the shredded cheese. Stuff the mixture back into the potatoes and top with the rest of the mushrooms and cheese as well as the coconut bacon. 


Stuffed potatoes (before baking)

Place stuffed potatoes back in the oven for another 30 minutes. Serve those suckers up.

A meal in a potato. Ya got your greens, your carbs, and your deliciousness contained in half a potato skin. Super yummy! I give them a 10.
